Where 120 g comes from
USDA FoodData Central: 1 cup unsifted, dipped of “Wheat flour, white, cake, enriched” = 137 g. FDC 169723
King Arthur Baking ingredient weight chart (“Unbleached Cake Flour”): 120 g per cup. Chart
This page uses 120 g (King Arthur). The two sources differ by 17 g (14.2%): that gap is about how firmly the cup is filled, not an error in either.
USDA's only cake-flour figure (137 g) is for a cup dipped into the bag, which packs it. Spooned and levelled, as most recipes mean, King Arthur measures 120 g, and that is what we use here. Sifted cake flour is lighter again, around 100 g.
How to measure cake flour by the cup
Stir it to loosen, spoon it into a dry measuring cup until heaped, then sweep the top level with the back of a knife. Do not tap or press the cup.
In the UK and Australia: cake flour (or plain flour with cornflour). Metric cups there hold 250 ml, so a metric cup of cake flour weighs about 127 g.
