Where 125 g comes from

USDA FoodData Central: 1 cup of “Wheat flour, white, all-purpose, enriched, bleached” = 125 g. FDC 168894

King Arthur Baking ingredient weight chart (“All-Purpose Flour”): 120 g per cup. Chart

This page uses 125 g (USDA). The two sources differ by 5 g (4%): that gap is about how firmly the cup is filled, not an error in either.

USDA weighs a cup of all-purpose flour at 125 g; King Arthur uses 120 g. Both assume the cup is spooned in and levelled. Scooping straight from the bag packs it down and can give 140 g or more, which is why cakes come out dry.

How to measure all-purpose flour by the cup

Stir it to loosen, spoon it into a dry measuring cup until heaped, then sweep the top level with the back of a knife. Do not tap or press the cup.

In the UK and Australia: plain flour. Metric cups there hold 250 ml, so a metric cup of all-purpose flour weighs about 132 g.
